Did you know that the Adour region produces kiwis? On this occasion, I went to get them at the <strong><a href=\"https:\/\/www.facebook.com\/Lesjardinsdevymm\/?locale=fr_FR\" target=\"_blank\" rel=\"noopener\">Vymm Gardens<\/a><\/strong> based in Lanton. Vanessa and Yohann have a <strong>a market-gardening farm selling fruit and vegetables all year round, with a delicatessen section<\/strong>. A national pride, our caviar has even been awarded its own <a href=\"https:\/\/caviardaquitaine.fr\/\" target=\"_blank\" rel=\"noopener\"><strong>Caviar d'Aquitaine\u00ab PGI\u00bb<\/strong><\/a> this year! For this festive season, <strong>a plump slab of lean meat will be very welcome.<\/strong> It gives me great pleasure to pick up my fish at Andernos les Bains from <strong>&quot;<a href=\"https:\/\/www.facebook.com\/p\/AU-BULOT-Poissonnerie-100054502328277\/\" target=\"_blank\" rel=\"noopener\">&nbsp;Au Bulot<\/a>&nbsp;\u00bb<\/strong> run by Nicolas Rambeau. A fishmonger's shop where a warm welcome and good advice are always given.<\/p>\n\n\n\n<p>This lean paving stone will be worked very simply because it will be <strong>just baked<\/strong> while you enjoy your starter. <strong>15 minutes in a 180\u00b0 oven on a baking tray lined with baking paper and brushed with olive oil.<\/strong>, Now you can cook your fish to perfection.<\/p>\n\n\n\n<p>As for drinks, a good wine from our region is always a good idea (<em>alcohol abuse is dangerous for your health. And what about the sauce? For this sauce, we're going back to basics <strong>namely beurre blanc<\/strong>. However, beyond the technical aspects that may put some people off, this beurre blanc has the merit of being flavoured with a reduction based on smoked lean from <a href=\"https:\/\/www.fumette-capferret.com\/\" target=\"_blank\" rel=\"noopener\"><strong>Fumette<\/strong>.<\/a><\/p>\n\n\n\n<p>Located in L\u00e8ge Cap Ferret, Fumette aims to be <strong>responsible and respectful of its environment<\/strong>. B\u00e9n\u00e9dicte and Julien, the co-founders, source their fish from small boats and make sure they work with fish that is in season. You'll find,<strong> lean, black mullet, sea bass<\/strong>... which are smoked and salted on a light base so that the original flavour of the fish is not lost when tasted.<\/p>\n\n\n\n<p>Did you know that there is a <strong>second fish smokehouse on the Bassin in Arcachon<\/strong> ? It is about <a href=\"http:\/\/kalalahti.fr\/\" target=\"_blank\" rel=\"noopener\"><strong>Kalalahti<\/strong> <\/a>in Biganos, run by Olivier Dumontet! This will be a fruit-based dessert, as I'm offering you <strong>a poached pear with hibiscus syrup, citrus fruit and honey.<\/strong> The pears always come from\u00ab&nbsp;<strong><a href=\"https:\/\/www.facebook.com\/Lesjardinsdevymm\/?locale=fr_FR\" target=\"_blank\" rel=\"noopener\">Vymm Gardens<\/a><\/strong>&nbsp;\u00bbin Lanton and the honey comes from the Marcheprime beehives\u00ab.\u00ab&nbsp;<strong><a href=\"https:\/\/www.lesruchersdeviviane.com\/\" target=\"_blank\" rel=\"noopener\">Les Ruchers de Viviane<\/a><\/strong>&nbsp;\u00bbwhich you can find at\u00ab&nbsp;<strong>Vymm Gardens<\/strong>&nbsp;\u00bbAnd in a number of sales outlets around Bassin in Arcachon.<\/p>\n\n\n\n<p>To this poached pear, I added a few handfuls of <strong>roasted dried fruit and dried cranberries<\/strong>.
